My story begins with the EasyBake Oven, the only plastic oven that can bake a cake with just a single lightbulb. Baking all of my favorite treats from mini three-layer cakes, to cookies, to even pretzels in my EasyBake Oven became one of my favorite childhood activities. This activity would soon become a passion. As high school approached, I was bombarded with college decisions. I was always stressing about where I will attend and what my major should be. This completely took the focus off of me, who I am, what I value, and my gifts. My passions lay at the center of food, nutrition, and wellness. Once I figured this out, I took my next big step and began my studies in Culinary Nutrition at Johnson and Wales University. This is easily one of the best decisions I have ever made. I aspire to teach Nutrition Education classes to low-income families who struggle to feed their families. I will be their guide to maintaining a nutritious diet while staying within budget. I am also in the process of writing a cookbook, including all of my recipes that I have created over the years. I hope to continue this path of recipe development, and begin selling my healthy baked goods from home. My products will not only be healthy but will cater to all those with different dietary needs.

      Do you live to eat, or eat to live? This is an important question to reflect on as millions of Americans suffer from diseases caused by poor nutrition and lack of food sources. The level of adequate nutrition can determine an individual's well-being, growth, development, and performance. For example, if we consider a gymnast's diet, the athlete's diet is designed to fuel their performance. The daily diet of the gymnast, what they eat before and after training, plays a vital role in their performance and recovery. What they eat is not solely based on flavor, texture, and presentation but nutritional needs. In the same way, we all have recommended daily allowances, which is the average intake of food to meet nutritional requirements. However, because food culture has introduced poor eating habits such as large portions, toxic amounts of sugar, fast foods, and more, these requirements are forgotten. If we can change the food culture, we can then change the health of Americans. It is not an easy mission, but it is a mission that is moving in the world of culinary arts. Culinary professionals are redefining healthy food. For so many people, healthy food is boring, bland, only salads, no fat, and expensive. This is not the truth. Nutrition is about balance and variety. Many chefs today aim to create dishes and educate others to cook nutritionally without compromising flavor. Once one has learned a few key techniques, it's quite simple and easy. It is time that Americans find that balance and develop a healthy relationship with food. Food is meant to be enjoyed and shared amongst family and friends, but it is also meant to keep you alive and well. We can and will combine the two. It has already been done, but many Americans still struggle to find this balance in their busy lives and lack of steady income. There are solutions to these issues. One major solution is the practice of food sustainability. There is a reason why food costs so much. Food products that are shipped from far distances cost more, due to the cost of transportation. How do we combat these prices? We switch to sustainable food practices. This is why the implementation of community gardens and buying local are becoming more popular. Not only will it cost less, but it will also have a less environmental impact. The problem with this concept is not everyone can switch to this style of living. Those living in cities may have a harder time growing their food due to a lack of space. Also, most current lifestyles do not reflect the attention and time that a garden needs. But this does not mean it isn't possible. With every mission, there are obstacles to overcome. Although there is much to accomplish in the future, it's important to recognize the progress that we have made in the world of culinary nutrition and sustainability. Culinary professionals must come together to make our country, and our world, a healthier, happier, and more sustainable home. Without strong influence from our culinary professionals, this wouldn't be possible.
      Superfood Lover Scholarship
      Ever since my first year of high school, I have prioritized my health. I began incorporating more nutrient-dense foods and less highly-processed foods into my diet. I began to see the importance of proper nutrition once I began paying attention to how I felt after eating. Foods that were extremely high in sugar, made me feel sick and lack energy. Once I experienced the beautiful cognitive and physical benefits of superfoods, I never wanted to return to my old eating habits. This is why I love superfoods, you know that your body is happy when you consume them! This is because food is a form of medicine. What we put into our bodies determines what we will get out of our health. I have come to love many superfoods, and I eat at least one of them each day. However, I do have a number one favorite: sea moss. Sea moss is a seaweed that can be purple or white. This extraordinary plant has been consumed for thousands of years. Sea moss is my go-to for almost any aspect of my health that I want to improve. Here is a list of just a few health benefits: improves digestion, reduces inflammation, contains 92 of the 102 vitamins and minerals that the human body consists of, contains collagen which will significantly improve the health and strength of hair, skin, nails, and joints. Sea moss can be easily incorporated into the diet. First, sea moss must be blended into a gel. The steps to preparing the gel are rinsing, soaking, then blending with water to make the gel. Conveniently, many companies sell the gel already made, and ready to be consumed! The gel will be flavorless so it can be used in anything and won't alter the flavor. Once I have the sea moss gel, I blend it up into a smoothie. One of my favorite flavor combinations is coconut milk, chia seeds, dates, cinnamon, and sea moss. It's creamy, delicious, and packed with superfood benefits. My love for superfoods doesn't stop there. Another favorite superfood of mine is quinoa. Quinoa contains all nine essential amino acids, which means that it is a complete protein. Essential amino acids are the building blocks, or molecules, of proteins that the human body doesn't produce on its own. Therefore, we must obtain them through our diet to meet adequate protein requirements. This marvelous grain is a whole grain, so it is a good source of fiber. For those who consume a vegan diet, quinoa is a necessary ingredient. It's an efficient way to incorporate some protein into the diet. Especially since it is a complete protein, it will prevent deficiencies often stemming from protein-lacking vegan diets. My favorite way to incorporate quinoa into my diet is by making a quinoa pilaf. I start by cooking some small diced onion, minced garlic, salt, and pepper in a little oil. Then I add the quinoa and cook it with these flavors for a few minutes. Next, I add the liquid, I usually use chicken broth, then I cook it until it's done. This pairs well with any protein and vegetable and it's a great side for meal prepping. I am a superfood lover of many different superfoods. There probably isn't a superfood that I wouldn't try. Superfoods are one the most essential forms of medicine. I love them because not only can they heal and improve health, but they can also be very delicious. Although I have my favorites, I am on a mission to find more superfoods to add to the list.
